A type of flat bread recipe prepared mainly with wheat flour and
flavored with coriander leaves and sesame seeds. Tastes best with MATAR PANEER,
BUTTER CHICKEN or with any gravy you like. Try this recipe and let me know in

INGREDIENTS:
For Yeast Activation:
*Warm milk- ½ cup
*Sugar- 1 tsp
*Yeast- 1 tsp
Other ingredients:
*Wheat flour- 3 cups
*Salt- to taste
*Curd- 1 cup
*Water- as needed to make the dough
*Coriander leaves- 2 tbsp
*Black sesame seeds- to sprinkle
*Butter- to cook kulchas
PROCEDURE:
*Mix sugar in warm milk to dissolve, sprinkle yeast on it and mix
lightly.
*Cover it and let it rest for 10 mins.
*You will notice that the mixture has bubbled up, it's an indication
that yeast is ready to use.
*In a large mixing bowl, add wheat flour, salt and mix well.
*Now add the fermented yeast and curd mix well to make a dough.
*Use some water if required to make the dough.
*Knead the dough well using some butter.
*Cover and let it rest for min. 1 hour.
*The dough has risen well, ready to use.
*Pinch a small ball sized dough and flatten it.
*Sprinkle some coriander leaves and sesame seeds.
*Gently roll to oval shape using rolling pin.
*Cook this on a cast iron tawa apply butter on both sides while
cooking.
*I like to cook my kulchas on tawa like regular rotis as it's easier
and saves time. You can even use the Flip upside down method to cook it.
*Finally serve hot butter kulchas with MATAR PANEER.
