INGREDIENTS:
*Rice- 1 cup
*Brinjal- 5 nos (sliced into 1’’ pieces)
*Onions- 1 nos (finely chopped)
*Coriander leaves- 1 tbsp (chopped)
*Curry leaves- 10-12 leaves
*Mustard- ¼ tsp
*Tamarind pulp- 2 tbsp (thick)
*Vangi bath powder- 1 tbsp
*Jaggery- small lemon sized piece)
*Cooking oil- 1 tbsp
*Salt- to taste
*Red chilli powder- ½ tsp
PROCEDURE:
*Cook rice normally. Take care that the rice is al-dente and not mushy.
*Spread it on a plate for cooling.
*Heat oil in a kadhai, add mustard seeds and let it crackle.
*Add curry leaves and let it crackle.
*Now add onion, brinjal slices and salt.
*Allow it to cook in it's own juices.
*Add chopped tomatoes and cook till mushy.
*Now add remaining spices and tamarind pulp.
*Add jaggery, adding jaggery helps in regulating the sourness of the
tamarind.
*Now add rice and toss well, take care not to break the rice.
*Sprinkle with coriander leaves.
*Serve hot with aloo poriyal.
