MASALA MACARONI

 

Tasty Indian style macaroni recipe made with veggies. A perfect tiffin recipe. This dish is perfect for fussy kids who refuse to eat veggies. Try this recipe and let me know in the comments how it turned out.

 


INGREDIENTS:

*Oil- ¼ cup

*Green cardamom- 2 nos

*Cinnamon- 2 1” sticks

*Cloves- 2 nos

*Onion- 2 (medium sized, sliced)

*Mint leaves- ¼ cup

*Chopped Carrot- ½ cup

*Green peas- ½ cup (fresh or frozen)

*Ginger-garlic paste- 1 tbsp

*Red chili powder- 1 tsp

*Garam masala- ½ tsp

*Salt- to taste

*Tomato puree- made from 5-6 tomatoes (medium sized)

*Chopped Coriander leaves- 2 tbsp

*Green chilies- 5 nos

*Lemon juice- 1 tbsp

*Chaat masala- 1 tsp

*Macaroni- 2 cups

*Water- 3 cups

 


PROCEDURE:

*Heat oil in a pressure cooker, Add cardamom, cloves and cinnamon.

*Now add onion, saute well until translucent.

*Now add mint leaves and saute for some time.

*Now add ginger garlic paste, salt and red chili powder.

*Mix well and fry till nice and crisp

*Now add veggies and mix well.

*Add tomato puree and all the spices.

*Mix well and around 1 cup water and close the pressure cooker.

*Pressure cook the veggies for 2 whistles.

*Let the pressure release naturally.

*Check for seasoning and add salt or red chili powder if needed.

*Now add 2 cups of boiling water to the masala.

*Add macaroni and mix well.

*Add salt for cooking macaroni.

*Pressure cook for 1 whistle, let the pressure release naturally.

*Alternatively, you can cook macaroni in a vessel.

*Let it rest for some time. Serve hot.

*Masala macaroni is ready.
