Combining two of my most favorite things, mango and PHIRNI; here I am again with a Mango delight recipe. I have used Mango Tang here, this intensifies the mango flavor a lot.
This desert is one of the best fusion- sweets I’ve ever had. Try this recipe

INGREDIENTS:
*Milk – 1 ½ litres
*Basmati rice - 200 gms
*Mango puree- 2 cups
*Mango Tang- 3 tbsp
* Sugar - 200 gms
*Condensed milk - 1 cup
*Almonds – 7-8 [ soaked for min 3 hrs]
*Raisins
METHOD:
* Wash rice and drain well. Spread a cloth and put the rice to
dry for 1 hr. {under sunlight if you have any}
* Take the dried rice and put in a small jar of mixer
and grind coarsely {not to fine and not too coarse}
*Boil milk and reduce into half. Now add 11/2 the coarse rice sooji.
*Keep stirring continuously while it cooks. The mixture should not
stick to the bottom.
* Let it boil for 5 mins.
*Check if the Sooji is soft.
* When it's soft, add mango puree and mix well.
*Now add Mango tang and mix well.
*Let it cook for some time.
*Now add sugar depending on the sweetness of mango and continue to
stir.
* After 5 mins add condensed milk and continue stirring.
*Turn off the heat. Pour the Phirni in small earthen handis. It will
impart a nice flavor to it.
* Remove almonds from water and peel it. Slice thinly.
* Garnish the Phirni with almond slivers and raisins. Serve chilled.
