LAYERED MANGO PUDDING

 

Mango is a versatile fruit which can be used in a million ways, one such is a creamy layered mango pudding. This pudding is layered with mango jelly, fruit, custard and yoghurt. INGREDIENTS:

*For the bottom most layer:

*Mango jelly pack- 1 nos

*Cubbed mangoes- ¼ cup

 

*For the 2nd layer:

*Milk- ½ ltr

*Mango custard powder- 5 tbsp

*Sugar- 3 tbsp (Add more if required)

 

*For the Yoghurt layer:

*Chilled curd- ½ cup

*Sugar- 2 tbsp

 

*For the topmost layer:

*Mango jelly crystals- 1 nos

*Cubbed fruits of your choice- ½ cup


 

PROCEDURE:

*Take tall glasses and refrigerate until use.

*Now prepare mango jelly according to the package instructions.

*Pour a small layer of jelly liquid in the glasses and let it set.

*Later, refrigerate the glasses.

*For the second layer, heat milk and let it come to a boil.

*When it starts boiling, add sugar and stir well to dissolve.

*Dissolve custard powder in ¼ cup milk and pour in the boiling milk.

*Cook, while stirring continuously until it thickens to a pudding consistency.

*Switch off the flame and let it cool to touch.

*Now pour the custard on the jelly layer halfway to the glasses.

*Level it up and let it set.

*Let it set for 1 hour.

*For the yoghurt layer, whip curd along with some sugar.

*Now pour around 2 tbsp of yoghurt in each glass.

*Refrigerate this for 10 mins.

*For the last layer, prepare jelly mix according to the package instruction.

*Pour this on top of the yoghurt layer along with cubbed mangoes and any fruits of your choice.

*Refrigerate for an hour. Serve chilled. Enjoy.
