Ghee is an all-time
favorite of my kids. Be it a hot steaming plate of rice or a bowl of soup, some
hot maggi or hot parathas A spoon of ghee is a must for my kids. When we sit to
eat lunch the first thing that is kept in Dastarkhwan is ghee. Today I am going
to share the recipe of homemade ghee. This is the same recipe which my
mother-in-law uses to make ghee for my kids. Do prepare ghee in this way &
let me know how it turned out. Please comment.
INGREDIENTS:
*Ice water -1 jug
*Turmeric powder- ¼ spoon
*salt- ½ spoon
PROCEDURE:
*You can either use store bought cream or collect malai at home.
*To collect malai at home I boil 1 liter of full fat milk and allow it to
cool.
*After 4 or 5 hrs A thick layer of malai will be formed in the milk
vessel.
*Now remove the malai carefully in a bowl and freeze it. Collect malai in
the same way daily
*When the bowl is full, Keep the malai outside overnight to soften it.
*Take out the malai in a mud handi (Mud Handi)
*Alternatively you can use a steel vessel if you do not have a handi
*Take a wooden hand masher [dal ghotni] and cream the malai well using
circular motions.
*Now gradually add cold water and mix again slowly.
*A lump of butter will slowly flaot on the top of the vessel/ handi.
*Remove the lump in a kadhai, put it on heat.
*Add turmeric powder and salt, mix well.
*The butter will slowly melt and transform into ghee.
*Keep stirring until it turns foamy, this takes around 5-7 mins.
*Allow to cool, strain it in a bottle and Ghee is ready to use.
NOTES:
*After removing the butter lump, you can use the buttermilk. Season it
and it's ready to drink.
*The leftover after straining can also be used, add around a cup of water
to the strained remains. Boil this mixture and strain the mixture and
refrigerate it. Use this water to boil dal or vegetables.
