Achaari chicken is a north indian curry made with pickling spices and
chicken. A delicious, quick and easy curry to impress your friends and family.
INGREDIENTS:
*Chicken {cleaned, washed and cut into medium sized pieces}- 500 gms
*Oil- 2 tbsp
*Onions- 1 large {finely sliced}
*Tomatoes- 1 large {finely sliced}
*Curd- ¼ cup
*Kalonji seeds {nigella seeds} – ¼ tsp
*Red chilli powder- 1 tsp
*Salt- to taste
For the spice mix:
*Kalonji seeds- ½ tsp
*Mustard seeds- ½ tsp
*Fenugreek seeds- ½ tsp
*Coriander seeds- 1 tsp
*Jeera- 1 tsp
*Dried red chilli- 4 nos
*Ajwain seeds- ¼ tsp
PROCEDURE:
*Heat oil in a heavy-bottom deep dish kadhai. Add kalonji seeds to it.
*Let it fry for around 10 secs.
*Now add sliced onions and fry until it turns slightly brown.
*Now add sliced tomatoes and fry till it turns mushy.
*Now add salt and chilli powder and fry for some time.
*Add Chicken and cook well by adding around ½ cup water.
*After the chicken is tender, Evaporate excess water.
*Meanwhile, we can prepare the spice mix.
*Heat a pan, add all the spices and dry roast on a low flame.
*Once the spices turn aromatic, turn off the flame and let it cool
completely.
*Transfer the spices to a mixer jar.
*Grind coarsely, don’t make a fine powder.
*Once all the excess water has evaporated, add the coarse spice mix and
curd.
*Mix well and simmer for around 10 mins.
*Achaari chicken is ready, serve it along with some roti or kulchas.
