KAJU KATLI OR KAJU BARFI

 

Kaju katli is a delicious and easy to prepare at home. A delectable blend of cashewnut and milk, topped by silver leaf. Give this recipe a try and let me know in the comments how it turned.



INGREDIENTS:

*Cashews- 250 gms

*Milk powder- 4 tbsp

*Sugar- 1 cup

*Water- ½ cup

*Ghee- 1 tbsp

*Silver vark/ foil

 

PROCEDURE:

*Blend cashews to a fine powder in batches. Make sure you don’t overdo it as cashew will release it's oil.

*Now add milk powder to it and mix well.

*Seive the cashew powder.

*In a pan, add sugar and water and allow it to boil until it reaches 1 string consistency.

*Now switch off the flame.

*Add the cashew powder to the sugar syrup and mix well.

*Now switch on the flame and cook the dough for 2-3 mins. You will notice that it will start leaving the sides of the pan.

*Now add ghee and turn of the flame.

*Let it rest for a few mins.

*Take a polythene sheet and apply ghee on it.

*Place the dough on it.

*Using the ends of the sheet, knead the dough for 3-4 mins. This will give us creamier kaju kaltis.

*Now roll out the dough evenly using a rolling pin.

*Now place silver vark on it.

*Let this to set for about 30 mins.

*Now cut it into equal sized katlis.
