Eggless Plum Cake

 

Loaded with dry fruits and enhanced with goodness of spices is this cake all about. Hope you will like this recipe and will give this a try.

 


INGREDIENTS:

FOR SOAKING:

*Black raisins- 3 tbsp

*Candied cherry-3tbsp

*tutty frutti-3 tbsp

*Roughly chopped cashewnuts- 3 tbsp

*Roughly chopped almonds- 3 tbsp

*Raisins- 3tbsp

*Orange juice- 6 tbsp

 

FOR CARAMEL:

*Sugar- 6 tbsp

*Warm water- 4 tbsp

 

FOR CAKE BATTER:

*Milk- 1 cup

*Oil/ Butter- 6 tbsp

*Vanilla essence – 1 tsp

*Cinnamon powder- 1 tsp

*All purpose flour- 2 cups

*Powdered sugar- ¾ cup

*Cocoa powder- 1 tbsp

*Instant coffee powder- 1 tsp

*Baking powder- 1 tsp

*Baking soda- ½ tsp

*White vinegar- 2 tsp

 

PROCEDURE:

*In a bowl soak all the dry fruits in orange juice for about 3 hrs.

*For making the caramel, take a pan and add sugar and heat until it melts.

*Keep stirring in the middle and keep the flame low.

*After the sugar melts and starts to change colour, add warm water, stir for a while and take it off heat.

*The syrup should be if flowing consistency. Let it cool completely.

*Now take a large mixing bowl, add milk, oil, vanilla essence and cinnamon powder and mix well.

*Now sieve together all the dry ingredients.

*Fold the dry into the wet ingredients. Do not overmix. Fold only till all the flour pockets have disappeared.

*Now add the prepared caramel sauce and the soaked dry fruits. Gently mix it.

*Now add vinegar and give it a quick mix.

*Immediately pour the batter into a 6 inch tin[ greased and lined]

*Place this in a preheated kadhai and bake this cake for 40-45 mins on medium to low flame.

*Let it cool and cut it into slices.

*Delicious bakery style plum cake is ready.
