We've all eaten desi aloo parathas, paneer parathas and parathas of many other fillings. But have you tried cheesy aloo paneer paratha. A twist to the desi paratha will surely have you drooling and make you fall in love wth it. Kids are sure to love these cheese-filled parathas. INGREDIENTS:
For the dough:
- Wheat flour- 2 cups
- Salt- a pinch
- Ajwain- 1/2 tsp
- Water- as needed for a soft dough
- Oil- to knead the dough
For the filling:
- Potatoes- 4-5 nos (medium-sized, boiled and peeled)
- Paneer- 200 gms (grated)
- Chilli flakes- 1 tsp
- Black pepper powder- 1 tsp
- Salt- to taste
- Chaat masala- 1 tsp
- Chopped coriander leaves- 1/2 cup
- Grated cheese- as required
PROCEDURE:
- Take wheat flour, salt and ajawain in a large bowl. Mix and add water gradually and knead into a smooth yet tight dough. Apply oil and knead well and cover it and let it rest for 10-15 mins.
- Meanwhile let's prepare the filling.
- Take Boiled potatoes in a bowl. Mash well using a wooden masher such that there are no large pieces.
- Now add grated paneer to it along with all the spices and herbs.
- Mix well and check for seasoning and add more salt and spice if needed. Make sure that the filling is spicy, so that the cheese added will balance out the flavours.
- Take a small portion of the dough and roll it out. Make sure that the edges of the dough are rolled thin, while the centre needs to be a little thick. Now add a portion of the filling on it, Add around a tbsp of grated cheese to it.
- Cover the paratha like a momo. Pinch out the excess dough. Roll out the paratha thinly. Don't apply too much pressure as it will tear out the dough layer and the filling will come out.
- Place the paratha on a hot tawa. Cook on both sides.
- Apply oil or ghee and cook till both sides are golden and crispy.
- Cheesy Aloo Paneer paratha is ready. Serve hot right away.
