Raw Mango Stir-fry Recipe | Maavinkai Palya

INGREDIENTS:

  • Raw mango- 1 no (peeled, and chopped into small pieces)
  • Oil- 2 tbsp
  • Mustard seeds- 1/4 tsp
  • Curry leaves- 1 sprig
  • Potatoes- 1 no (peeled and finely chopped)
  • Onion- 1 no (large, finely chopped)
  • Salt- to taste
  • Dry red chilli- 1 no (deseeded, finely cut)
  • Sugar- 1-2 tsp (depending upon the tanginess of the mango)
  • Red chilli powder- 1/2 tsp
  • Chopped coriander leaves- 2 tbsp

PROCEDURE:

  • Heat oil in a kadhai, add mustard seeds and curry leaves to it and let it splutter.

  • Now add the finely chopped potatoes to it.

  • Saute and cook the potatoes till it turns slightly golden.

  • Now add chopped onions, cut red chilli and salt to it.

  • Cook the onions till they turn soft.

  • Now add chopped raw mango to it.

  • Add red chilli and sugar to it. Sugar balances the tanginess of the mango, You can even add jaggery instead.

  • Cook fo 5 mins on high flame. Add chopped coriander leaves and mix gently.

  • Maavinkai palya is ready. Serve right away along with roti and dal.
