Banana Chocolate Chip Muffins | Eggless Banana Choc Chip Muffins Recipe

Got bananas which are too ripe and you're planning to throw them away? Make these quick and easy Banana Choco chip muffins. These Banana Choco Chip muffins are soft, fluffy and light. Made with fresh bananas and whole wheat flour and topped with choco chips. These are eggless and made without butter, and no condensed milk or yogurt is used. These are quick and can be made easily in under 15 mins. I've made it in a microwave which makes them in 2 mins. You can make it easily as an after-school or after-work snack to satisfy your sweet tooth. This recipe will yield you a batch of 12 muffins, you can double this recipe or even halve it according to your requirement. Check out the step-by-step picture instructions below and do try it out. INGREDIENTS:

  • Ripe Bananas- 2 nos (large)
  • Sugar- 2/3 cups
  • Oil- 1/2 cup (I've used sunflower oil here)
  • Whole wheat flour- 1 1/2 cups
  • Salt- a pinch
  • Baking powder- 1 tsp
  • Baking soda- 1/2 tsp
  • Milk- 1/2 cup
  • Choco chips- 1/2 cup (You can even use walnuts instead)

Procedure:

  • Take bananas in a bowl, mash them finely using a fork. Make sure to use ripe bananas, as riper the bananas are, lesser sugar you'll need to add. If your bananas are not sweet enough, add 1 tbsp sugar extra along with the mentioned amount.

  • Add sugar and oil to it. I'm using sunflower oil, you can even add melted butter instead.

  • Whisk well until the sugar is dissolved and incorporated with the oil evenly.

  • Now sieve together flour, baking powder, soda and salt. I've used whole wheat flour to make it healthier, you can use maida instead.

  • Add half of the dry mix to the wet mix. Mix gently using a spatula.

  • Now add the rest of the dry mix and mix using cut and fold method. Now add milk to it.

  • Mix gently. Check the consistency below, we do not want a thin batter. Make sure to keep it thick as we don't want the choco chips to sink.

  • The batter is ready. Scoop out the batter in cupcake liners. Don't overfill it, add only halfway. Sprinkle choco chips on it.

  • Microwave the muffins for 2 mins. The muffins will be done, or else microwave for 30 secs more.
  • Your super quick Eggless Choco chip banana muffins are ready. Serve it right away.
