INGREDIENTS:

For the Semolina Base:

  • Milk- 500 ml
  • Semolina- 2/3 cups
  • Sugar- 2/3 cups
  • Vanilla essence- 1 tsp
  • Butter- to grease the plate

For the Second layer:

  • Sliced swiss roll (I've used store-bought ones)

For the Chocolate pudding layer:

  • Milk- 200ml
  • Milk powder- 2 tbsp
  • Cocoa powder- 2 tbsp
  • Cornflour- 3 tbsp
  • Sugar- 1/2 cup
  • Dark chocolate compound- 1/2 cup (chopped)

PROCEDURE:

  • Take semolina, sugar in a vessel and mix well.

  • Add milk to it and stir until the sugar dissolves.
  • Now switch on the flame and cook it, while stirring continuously. This process takes around 4-5 mins.
  • Keep cooking this mixture until it reaches a thick consistency. An indication that it's done is that while cooking you make a path through the ladle and it stays intact.

  • Grease the plate while the mixture is still on heat. I'm using a steel plate for this purpose. You can even use a glass dish too. Switch off the flame and pour the mixture on the plate. Spread and level it up immediately, as it takes shape as soon as it starts to cool. Make sure that the plate is greased evenly.

  • Add a layer of sliced swiss roll. You can add any cake you like or even skip this step as it's optional.

  • Take milk powder, cornflour, cocoa powder and sugar in a bowl. Add milk to it and dissolve it completely.

  • Add this mixture to a vessel. Switch on the flame. Cook the mixture while stirring continuously.

  • Cook this mixture till it thickens up.
  • Once the mixture is thick, add chopped dark chocolate to it and mix gently. Lower the flame and let it melt.

  • Your decadent and rich chocolate pudding is ready.
  • Pour this on the semolina and cake layer. Let it come to room temperature before refrigerating it for at-least 2-3 hrs.

  • Once set, cut into small cubes using a greased knife. Sprinkle with toppings of your choice and serve chilled.
