These nuggets are crispy on the outside and soft and cheesy on the inside. A perfect evening snack option as well as a great iftar snack recipe. INGREDIENTS:
- Boneless chicken chunks- 250 gms (cleaned, washed and drained in a colander)
- Salt- to taste
- Red chilli flakes- 1 tsp
- Chaat masala- 1 tsp
- Jeera powder- 1 tsp
- Onion powder- 1 tsp
- Garlic powder- 1 tsp
- Potatoes- 2 nos (medium-sized)
- Chopped coriander leaves- 2 tbsp
- Bread crumbs- 1 cup
- Cornflour slurry= Cornflour-2 tbsp + Water- 2 tbsp + Salt- a pinch + Black pepper powder- 1 tsp
- Oil- for deep frying the nuggets
- Grated Cheese- 1 cup (I've used Mozzarella here, you can use any cheese you prefer)
- Crushed vermicelli- 1 cup (for coating)
PROCEDURE:
- Wash the potatoes well. Chop them in half and boil them in pressure cooker for 2 whistles. Let it cool down. Peel them and let them dry in the colander for a few mins.
- Take the ingredients shown in the image below in a mixer jar. Pulse it for a min and mix well. You must not make a fine paste of it, but rather just pulse it until evrything is incorporated well and the chicken is chopped finely.
- Add the chicken to a bowl. Mash the boiled potatoes and add them to the chicken mince along with chopped coriander leaves.
- Mix well and add bread crumbs to it and mix again. Knead the dough using a little oil.
- Make equal sized portions of the dough. Take a portion, spread it a little evenly, place a small amount of cheese. Close the opening and roll it perfectly to a ball.
- Repeat the same with the rest of the dough.
- Dip the cheese balls in the slurry we made one by one. Coat it evenly and now take it and roll it in the crushed vermicelli. Coat it properly and dust off the excess.
- Repeat the same with all the nuggets.
Refrigerate it for at-least 10 mins. - Heat oil in a kadhai, once the oil is hot, drop the nuggets gently in the hot oil. Fry them till they get a nice golden colour.
- Cheesy chicken nuggets are ready, Serve them right away.
