Tomato Rice Recipe

Tomato rice is a quick, spicy and tangy rice recipe made using lots of tomatoes, spices and herbs. It tastes delicious, aromatic and flavourful and doesn't need any side dish as it is already flavourful. Each Indian home and each region has a different way of making it. In South-Indian hotels, tomato rice is served along with papad. Check out the recipe below and do try it out. Let me know in the comments section how it turned out.


INGREDIENTS:

  • Cooked Rice- 2 cups (Make sure it is not over-cooked and the grains should be fluffy)
  • Tomatoes- 2-3 nos (medium sized, ripe)
  • Oil- 2 tbsp
  • Mustard seeds- 1 tsp
  • Curry leaves- 1 sprig
  • Roughly chopped green chillies- 2 nos
  • Red chilli powder- 1 tsp
  • Salt- to taste
  • Chopped coriander leaves- 2 tbsp

PROCEDURE:

  • Take cooked and cooled rice and set it aside. You can either cook it and let it cool completely or use refrigerated cooked rice. Make sure that all the rice grains are separated from each other.
  • Puree the tomatoes and set it aside.
  • Heat oil in a kadhai, add mustard seeds and curry leaves and let it crackle.
  • Let the curry leaves turn crispy, now add the tomato puree to it and mix well.
  • Add salt and red chilli powder to it and mix well. Add chopped green chillies too.
  • Now let the tomato mixture cook and reduce to half. This process may take 5-6 minutes.
  • By now the tomato mixture may have reduced and cooked completely. Check for seasoning and add more salt and spice if needed.
  • Now add the cooked rice and coriander leaves and mix well.
  • Simmer it and let it dum for 5 mins or else you can microwave the rice for 5 mins.
  • Homestyle Tomato Rice is ready. Serve hot.
