INGREDIENTS:

  • Potato/ Aloo- 1 (large, round shaped)
  • Besan/ Chickpea flour- 3/4 cup
  • Red chilli powder- 1 tsp
  • Hing- 1/2 tsp
  • Ginger garlic paste- 1 tbsp
  • Chaat masala- 1 tsp
  • Onion powder- 1/2 tsp
  • Garlic powder- 1/2 tsp
  • Salt- to taste
  • Water- 1/2 cup
  • Baking soda- a pinch
  • Oil- for deep frying

PROCEDURE:

  • Peel the potato and slice thinly. Make sure to pat it dry after washing.
  • Take a large mixing bowl, add all the spices and ginger garlic paste and mix well.

  • Now add besan to it along with baking soda. Baking soda is optional, it is added for extra puffy texture.

  • Now add water to it and mix well to a smooth batter. Make it to a flowing consistency.

  • Now dip the aloo slices and coat it in the batter completely.

  • Heat oil in a kadhai.

  • Drop the batter dipped aloo in hot oil.

  • Keep stirring in intervals and fry on both sides till crispy and golden.
  • Aloo bajji is ready, serve right away along with tomato ketchup.
