INGREDIENTS:
- Potato/ Aloo- 1 (large, round shaped)
- Besan/ Chickpea flour- 3/4 cup
- Red chilli powder- 1 tsp
- Hing- 1/2 tsp
- Ginger garlic paste- 1 tbsp
- Chaat masala- 1 tsp
- Onion powder- 1/2 tsp
- Garlic powder- 1/2 tsp
- Salt- to taste
- Water- 1/2 cup
- Baking soda- a pinch
- Oil- for deep frying
PROCEDURE:
- Peel the potato and slice thinly. Make sure to pat it dry after washing.
- Take a large mixing bowl, add all the spices and ginger garlic paste and mix well.
- Now add besan to it along with baking soda. Baking soda is optional, it is added for extra puffy texture.
- Now add water to it and mix well to a smooth batter. Make it to a flowing consistency.
- Now dip the aloo slices and coat it in the batter completely.
- Heat oil in a kadhai.
- Drop the batter dipped aloo in hot oil.
- Keep stirring in intervals and fry on both sides till crispy and golden.
- Aloo bajji is ready, serve right away along with tomato ketchup.
