Instant grated mango pickle is an easy and quick pickle made using raw totapuri mangoes. Mango pickles are generally made by chopping mangoes, but here in Bangalore aachar is made by grating totapuri mangoes and in this season totapuri mangoes are widely available. It is fondly known as "aamini ki chutney" in Bangalore. It is spicy, tangy and best paired with hot steaming rice and dal. Check out the recipe below and do try it out. INGREDIENTS:
- Raw totapuri mangoes- 2 nos (approx. 700-800 gms)
- Oil- 2 cups
- Mustard seeds- 1/2 tsp
- Curry leaves- 1 cup
- Garlic cloves- 1/2 cup (medium-sized cloves)
- Salt- 2 tsp
- Red chilli powder- 2 tsp (more or less according to your preference)
- Hing- 1 tsp
- Roasted mustard powder- 3/4 tsp
- Roasted fenugreek powder- 1/2 tsp
PROCEDURE:
- Wash totapuri mangoes and wipe it dry. Make sure to use raw and green ones which are firm.
- Peel them and grate them using a grater. Don't grate it too fine, we want thick strands of mango.
- Refrigerate until further use.
- Heat oil in a kadhai. Preferably sesame oil or groundnut oil.
- Add mustard seeds once the oil is hot. Allow the seeds to crackle. Now add curry leaves and let them turn crispy.
- Switch off the flame, add garlic cloves and all the powder spices to it.
- Mix well and let the oil cool down to room temperature.
- Now add the oil to the grated mango and mix well.
- Store them in a sterilised glass jar. Refrigerate until use.
- This Instant achaar stays fresh in the refrigerator for 6-7 months.
- Instant Aam ka Achaar is ready. Serve it along with hot steaming rice.
Note:
- Use a clean and dry spoon for the achaar, and store the achaar in an air-tight container.
- You can adjust the spiciness according to your preference.
- Select raw and firm mangoes for this recipe.
- Don't get in touch with water while preparing the pickle, It will spoil the pickle.
