A quick snack and breakfast recipe, Poha recipe. It's basically flattened rice (Poha) cooked with spices, herbs, onion and lemon. This recipe can be made in 15 mins. INGREDIENTS:
- Oil- 2 tbsp
- Mustard seeds- 1/4 tsp
- Curry laves- 6-7 leaves
- Peanuts- a handful (more or less according to your preference)
- Onion- 2 nos (medium sized, finely chopped)
- Salt- to taste
- Poha- 2 cups
- Dry red chillies- 2 nos (broken roughly)
- Turmeric powder- 1 tsp
- Ghee- 1 tbsp
- Juice of 1 lemon
- Coriander leaves- 2 tbsp (chopped)
PROCEDURE:
- Heat oil in a kadhai, you can even use ghee instead for a rich flavour.
- Add mustard seeds and curry leaves to it and allow to splutter.
- Now add peanuts to it and keep stirring. Fry them for a minute until it turns slightly golden.
- Now add chopped onions to it along with some salt and turmeric powder. Cook it for 2-3 mins. We won't cook the onions until soft, we'll let it be crispy as poha tastes great with crispy onions.
- Take poha in a bowl, wash it up and immediately and add it to the cooking onions. This brief soaking period will make poha soft and yummy.
- Now mix the poha gently and let it simmer for 2-3 mins.
- Now add ghee, lemon juice, coriander leaves to it and mix well.
- Tasty and quick poha is ready, serve hot right away.
