Malai Chicken Curry | Creamy Malai Chicken Curry Recipe

Malai Chicken is a creamy and rich chicken curry recipe where chicken pieces are cooked with fresh cream , curd and spices along with a spicy onion-tomato base gravy. INGREDIENTS:

For the Onion-Tomato base:

  • Oil- 2 tbsp
  • Green chillies- 4 nos
  • Onion- 2 nos (roughly chopped)
  • Tomatoes- 6-7 nos (roughly chopped)
  • Garlic cloves- 7-8 nos

For the Gravy:

  • Oil- 2 tbsp
  • Cinnamon- 2 1'' sticks
  • Cloves- 4-5 nos
  • Bay leaf- 2 nos
  • Chicken- 750 gms (curry cut)
  • Salt- to taste
  • Red chilli powder- 2 tsp
  • Mint powder- 1 tsp
  • Kasuri methi- 1 tsp (crushed)
  • Jeera- 1 tsp
  • Fresh cream- 1/2 cup
  • Curd- 200 ml

PROCEDURE:

For the Onion- tomato base:

  • Heat oil in a kadhai, add green chillies to it and fry for a few secs.

  • Once the chillies start to splutter, add chopped onions and some salt and let it cook for a few mins.

  • Now add chopped tomatoes and mix well. Cook the tomatoes until mushy.

  • Now add garlic cloves and let it cook.

  • The tomatoes are cooked, switch off the flame and let it cool down completely.

  • Remove it in a blender jar and blend it to a fine puree.

  • Set it aside, while we prep the chicken.

For the Chicken:

  • Heat oil in a thick bottomed vessel, add the whole spices to it and fry it for a few secs.

  • Now add cleaned, washed and drained chicken to the frying spices. Add salt to it.

  • Mix gently and fry it till the chicken changes colour.
  • Now add red chilli powder, jeera, mint powder and kasuri methi to it.

  • Mix well and allow the chicken to cook in it's own juices.
  • Now add the onion-tomato puree to it and mix well. Let it cook till the chicken is 80% cooked.

  • Once the chicken is cooked simmer it for 5-10 mins.
  • Now add fresh cream and curd to it and mix gently.

  • Check for salt and spice and add more seasoning if required.
  • Simmer it for 5-10 mins and let the oil accumulate on the top.
  • Malai Chicken is ready, Serve hot with kulcha or naan.
