Today I'm sharing the recipe of handmade fettuccine pasta recipe without a pasta machine. Fettuccine: Flat, thick noodles, meaning to "little ribbons" in Italian. I generally cook with store-bought pasta. But recently I thought to try my hand in handmade pasta. After a let of research, I came up with this recipe. Most pasta recipes are made using eggs, but I have tried an eggless version. And I also substituted all-purpose flour with whole wheat flour for a healthier version. Though there are many variations to a pasta dough, this is a simple yet easy to put together recipe which can be made without a pasta machine. I was surprised by it's results as fresh pasta tastes more flavourful. Stay tuned for Arrabbiata sauce recipe which will be my next post. INGREDIENTS:
- Whole wheat flour- 200 gms
- Salt- to taste
- Water- 100 ml approx.
- Wheat flour- for dusting
PROCEDURE:
- Take wheat flour and salt in a bowl. You can even use all-purpose flour instead.
- Mix well and add water as required to knead a semi-tight dough. Once the dough starts taking shape, cover it with a damp cloth and let it rest for 15 mins.
- Now take the dough on a flat surface and knead it for 10 mins. Make sure to stretch the dough and knead it with the help of your palm. This process will make the pasta crack-free and hold it's shape.
- Now cover it again with a damp cloth and let it rest for half an hour.
- Now divide the dough into four parts and shape them.
- Flatten out the dough into a very thin chapati, Make sure that it is evenly thin. Place the chapati in a big plate and sprinkle flour all over it.
- Roll out all the dough balls similarly and stack them on one another, by adding a generous layer of flour between each layer.
- Fold it into a log and add flour at every fold, adding flour makes it non-sticky.
- Cut into thin strips and dust it with flour again
. - Seperate the layers gently, add more flour to make it non-sticky.
