Fettuccine Arrabiata | Spicy pasta with Arrabiata Sauce

Arrabiata is an Italian word meaning "angry" and that's the reason this sauce is red in colour. The core ingredient of this tasty and spicy sauce is Tomato. Arrabiata sauce is a tangy, spicy and tasty sauce, made using garlic, chilli flakes and a tomato base along with fresh herbs. This may not be the authentic recipe of the sauce, As I have altered the flavours according to our palette. Still, the pasta has the essence of an authentic arrabiata sauce pasta. For this recipe I have used handmade fettuccine pasta (I have shared it's recipe in the previous post), you can alternatively use store-bought pasta and boil it along with some water and use it in this sauce. INGREDIENTS:

  • Olive Oil- 2 tbsp
  • Garlic- 2 tbsp (chopped)
  • Finely chopped Coriander stems- 1 tbsp
  • Chilli flakes- 2 tsp
  • Onion- 1 no (finely chopped)
  • Sugar- 1 tsp
  • Green chillies- 2-3 nos
  • Tomato puree- made out of 5-6 tomatoes (Keep it a bit coarse and don't make it too fine)
  • Salt- to taste
  • Basil leaves- 1 tsp (optional)

PROCEDURE:

  • Heat oil in a pan, add garlic cloves to it and saute it on low flame. Saute until it reaches a light golden colour.

  • Now add coriander stems to it and saute foe a few secs. This step makes the pasta sauce more flavourful.




  • Now add red chilli flakes to it and mix well.

  • Now pour the tomato puree to it and some salt to it.

  • Mix well and let it cook, add some sugar at this stage. Sugar balances the tanginess of the tomatoes.

  • Cook it for 10-15 mins or until the sauce thickens and reduces to half. Now add Black pepper powder and crushed mint leaves to it.

     
  • At this stage, simmer the sauce while we boil the pasta.
  • If you are using store-bought pasta, boil it in salty water until 80-85% done and then drain it in a colander and add it to the sauce, add some pasta water if required.
  • Handmade fresh pasta can be cooked in very less time. Add some salt and oil to boiling water and gently add the pasta. The pasta will be done in under 4 mins.

  • Drain it in a colander and add the pasta immediately to the sauce, mix very gently. Your fettuccine arrabiata is ready. Serve hot right away.
