Slices of mutton marinated in a spicy marinade and later fried to perfection, served along with onion slices and lemon wedges. INGREDIENTS:
- Mutton slices- 500 gms (thin boneless slices with no fat)
- Ginger garlic paste- 2 tbsp
- Raw papaya paste- 1 tbsp
- Salt- to taste
- Red chilli powder- 2 tsp
- Turmeric powder- 1 tsp
- Chilli flakes- 1 tsp
- Black pepper powder- 1 tsp
- Chaat masala- 2 tsp
- Soya sauce- 1 tbsp
- Juice of 1 lemon
- Mutton masala- 2 tbsp
- Kasuri methi- 1 tsp
- Oil- for frying
- Onion slices and lemon wedges (for serving)
PROCEDURE:
- Clean and wash the mutton slices thoroughly and drain it in a colander. I have used mutton without fat, you an even include fat if you prefer.
- Take a large mixing bowl, add mutton slices and all the dry spices and pastes. Mix well and apply masala to all the slices evenly.
- Make sure that you don't skip raw papaya paste as it works as meat tenderiser, and we are cooking it only on tawa so it won't be possible without a meat tenderiser.
- Place the pieces on a plate and let it dry and marinate for at-least 2-3 hrs or best if kept overnight.
- You can marinate the mutton and keep it ready, and use it when you have unexpected guests.
- Heat an iron tawa, drizzle some oil over it. Place the mutton pieces over it one-by-one. Make sure that you don't overcrowd it.
- Fry the slices on both sides until crispy. This might take 5-7 mins.
- When the mutton slices turn crispy, remove from flame.
- Tawa phaal is ready, serve right away along with onion slices and lemon wedges.
