Indian-style masala pasta recipe made using Indian spices, herbs, mix veggies and penne pasta. A desi twist to the classic Italian recipe. An easy to make recipe which is loved by kids and adults alike. Masala pasta is an Indian-Italian fusion dish that may have originated on the streets of India, selling it as a street food. INGREDIENTS:
- Penne pasta- 2 cups (You can use fussili, elbow or any other pasta of your choice)
- Salt- to taste
- Oil- 2 tbsp
- Sliced garlic- 2 tbsp
- Finely shredded cabbage- 1 cup
- Carrots- 1/2 cup (finely chopped)
- Capsicum- 1/2 cup (finely chopped)
- Frozen sweet corn- 1/2 cup
- Tomato- 2 nos (finely chopped)
- Onion powder- 1 tsp
- Garlic powder- 1 tsp
- Red chilli powder- 1/2 tsp
- Chilli flakes- 1 tsp
- Black pepper powder- 1 tsp
- Chilli sauce- 1 tsp
- Sugar- 1 tsp
- Soya sauce- 2 tbsp
- Ketchup- 2 tbsp
- Coriander leaves- 2 tbsp
PROCEDURE:
- Take water in a pan, add some salt and allow it to come to a boil.
- When the water comes to a rolling boil, add the pasta and let it cook until 80% done.
- Drain the pasta in a colander, reserve some pasta stock we'll use it later.
- Heat oil in a broad vessel, add garlic to it and fry until golden.
- Now add chopped carrots to it along with some salt and let it cook.
- Now add cabbage, capsicum and corn and let it cook evenly.
- This process may take 5-6 mins. Keep sauteing in intervals.
- Now add all the spices and sauces to it.
- Mix well and let it absorb all the masalas properly.
- Now add the boiled pasta along with 1/2 cup of the pasta water.
- Mix gently such that the masalas are coated to the pasta properly.
- Check for seasoning and add more flavours if required.
- At this stage you can add fried paneer, or scrambled eggs, or fried and shredded chicken to it.
- Masala pasta is ready. Serve it right away.
