Egg Vermicelli | Vermicelli With Fried Eggs | Egg Semiya Upma

Egg vermicelli or egg semiya upma is the tastiest breakfast you could ever make. It is not only easy to put together, but also tastes amazing. Addition of egg makes it filling for breakfast and a good protein source. I have used carrots and green peas here, you can add more veggies if you prefer. Alternatively, you can even skip veggies if you are in a hurry. You can even replace egg with cooked mutton kheema. Make sure to try this easy recipe and let us know how it turned out.


INGREDIENTS:

  • Oil- 2 tbsp
  • Onion- 1 cup (sliced)
  • Ginger-garlic paste- 1 tbsp
  • Red chilli paste- 1 tsp
  • Salt- to taste
  • Chopped carrot- 1/2 cup
  • Green peas- 1/2 cup
  • Mint leaves- 1/2 cup
  • Jeera powder- 1 tsp
  • Chaat masala- 1 tsp
  • Coriander leaves- 1/2 cup (chopped)
  • Tomato puree- made up of 8-10 medium-sized tomatoes
  • Water- to cook vermicelli
  • Roasted vermicelli- 3 cups
  • Oil- 1 tbsp
  • Eggs- 3-4 nos

PROCEDURE:

  • Heat oil in cooker, add sliced onions to it and fry well. Add some salt and fry until soft and translucent.
  • Now add ginger garlic paste and fry for a min.
  • Now add red chilli powder and saute well, add mint leaves to it and fry well.
  • Now add the veggies to it and fry for a min.
  • Now pour in the tomato puree to it along with jeera powder and chaat masala and mix well.
  • Cover the lid and pressure cook for 1 whistle, allow the pressure to release naturally.
  • Transfer all the masala to a vessel, add 1 1/2 cups of water to it. Quantity of water depends on the type of vermicelli you are using. Make sure that you are using roasted vermicelli.
  • Allow the water to come to a boil, check for seasoning and add more salt and spice if required.
  • Once the water comes to a boil, add vermicelli and chopped coriander leaves to it. Mix gently.
  • Add more water if required.
  • Allow the vermicelli to cook while stirring in intervals.
  • Once it's cooked, lower the flame and let it dum.
  • Let it be on low flame for at-least 5-6 mins. Switch off the flame and let it rest for 5 mins.
  • Heat oil in a pan, crack in the eggs and sprinkle some salt over it. Mix well and let it cook. Scramble the eggs as it gets cooked.
  • Once the eggs are cooked and scrambled, add them to the vermicelli and mix gently.
  • There you go, egg vermicelli is ready. serve it right away along with some ketchup.
