INGREDIENTS:
- Fresh Strawberries- 300 gms
- Sugar- 150 gms
- Salt- a pinch
- Lemon juice- 1 tbsp
PROCEDURE:
- Take fresh strawberries in a bowl, remove the leaves from it and wash it well. Drain it in a colander.
- Remove the white part of the strawberries. Chop the strawberries finely. I've chopped it finely because i want a smooth jam. If you prefer a chunkier jam, roughly chop the strawberries.
- Take a non-stick sauce pan, add chopped strawberries, sugar, salt and lemon juice to it. Salt enhances the taste beautifully. Lemon juice is added to retain the red colour of the berries. You can even use vinegar instead.
- Mix well and let the strawberries soak in the sugar before cooking. This step reduces the cooking time. However, this step is optional.
- Switch on the stove and cook the strawberries on low flame. Cook them on low flame for atleast 5-7 mins.
- Increase the flame of the stove and start mashing the strawberries while stirring continuously.
- Keep stirring and make sure that the strawberries don't stick to the bottom. Now you'll see foam accumulating on the top. Remove the foam using a spoon.
- Keep cooking the jam on medium flame. You'll see the colour has become bright and you won't have to add any artificial colouring.
- Take a small amount and place it on a plate. Tilt the plate and if the jam is not runny and stable, then it's ready. If the jam is runny, then cook for another 2 mins.
- Switch off the flame and transfer the jam immediately in a clean glass jar. The jam
thickens on cooling, that's why we'll let it cool in the jar itself. - Once it comes to room temperature, refrigerate it. This jam stays fresh for almost 6 months when stored in the refrigerator.
- Use a clean spoon and store it in the fridge after consuming.
- Strawberry jam is ready. Make sure to try it at home and share your valuable feedback.
