INGREDIENTS:
For the Filling:
- Mutton kheema- 500 gms
- Oil- 2 tbsp
- Jeera- 1 tsp
- Onion- 1 cup (finely chopped)
- Chopped green chillies- 2 nos
- Tomato- 1/2 cup (finely chopped)
- Ginger-garlic paste- 2 tbsp
- Chopped coriander leaves- 1/2 cup
- Salt- to taste
- Red chilli powder- 1 tsp
- Black pepper powder- 1 tsp
- Jeera powder- 1 tsp
- Chaat Masala powder- 1 tsp
For the Roll:
- Tandoori mayo
- Chopped cucumber
- Chopped Onions
For the Paratha:
- Whole-wheat flour- 2 cups
- Salt- to taste
- Water- as required
- Oil- to knead the dough, to cook the parathas
PROCEDURE:
- Heat oil in a pressure cooker, add jeera and chopped green chillies. Allow it to crackle.
- Now add onions and some salt and cook the onions until golden brown, this will impart a good colour and flavour to the kheema.
- Now add washed and drained kheema to it, saute and cook for 5 mins on high flame until it changes colour.
- Now add ginger-garlic paste and powdered spices to it and saute well.
- Now add chopped tomatoes to it, you can even add chopped potatoes and peas at this stage.
- Now add chopped greens and some water to it.
- Mix well and cover and cook them for 3 whistles or until done.
- Allow the pressure to release naturally. Check for salt and spice and add more if required.
- Reduce all the extra gravy and let it get dry.
- Now let's prepare the parathas. In a large mixing bowl, add flour, salt and add water gradually to make a semi-soft dough.
- Allow the dough to rest for 10 mins.
- Roll out thin parathas and cook them by apply oil on both sides and cook till crisp and flaky.
- Now spread a layer of tandoori mayo, you can even use plain mayo or ketchup instead. Place a generous helping of the kheema filling, add some cucumber and onion. Roll tightly and you can use a tissue or butter paper to hold it in place.
- There you go, mutton roll is ready. Serve right away and devour.
