Hey! Today I'm sharing the recipe of grape jam made without preservatives and no pectin used. I've used a combination of green and black grapes here, you can alternatively use a single variety or even a combination of three types. This recipe only requires 5 ingredients which are easily available in an Indian household. Since this jam is made without any preservatives, you need to store it in the refrigerator. Stays fresh for 6 months when stored in the refrigerator. Since i have not used pectin, i used agar-agar to get a jammy consistency. Alternatively, you can skip that too. But the consistency of the jam will be a bit thin. I have mentioned all the substitutions for the ingredients, hope it helps. INGREDIENTS:
- Green grapes- 100 gms
- Black grapes- 100 gms
- Sugar- 200 gms (more or less depending on the sourness of the grapes)
- Salt- a pinch
- Juice of 1 lemon
- Agar- agar- 1 tbsp
PROCEDURE:
- Chop up the green grapes, deseed the black grapes and chop them roughly.
- Add sugar, salt and lemon juice to it and let it soak for an hour. Soaking reduces the cooking time of the fruits.
- Cook the mixture on medium flame while stirring continuously
- Cook the mixture till the grapes turn mushy. This process takes around 5-10 mins.
- You'll notice that the grapes are mushy, Strain the mixture. Let the cooked grapes cool down.
- Blend the grapes in a grinder jar once it cools down. Now add all of it back to the vessel.
- Check for sugar and add more sugar if needed, simmer it for 5 mins.
- Cook agar-agar in a vessel until it dissolves, add it to the simmering jam and mix well.
- Cook for 2 mins and switch off the flame.
- Pour the hot jam in a glass jar and let it cool completely before refrigerating.
- Grape jam is ready, serve it by spreading it on a toast.
