Dehydrating curry leaves prevents wastage and helps it stya fresh for a longer time. Curry leaves are available throughout the year, but at winters, curry leaves get spoilt easily. This is the easiest way to preserve them. I've made a powder after dehydrating them, alternatively you can even store it as it is. INGREDIENTS:
- Curry leaves- a large bunch
PROCEDURE:
- Wash the curry leaves and drain it in a colander.
- Allow the water to drain off completely.
- Now spread the leaves on a clean cotton cloth and allow it to dry for at-least 3-4 hrs.
- You'll notice that the leaves have dried at bit and turned hard.
- Place the leaves in a microwave-safe bowl and microwave for 3 mins. The leaves will get crispy by now. Once you notice that they're crispy, they're ready.
- I've powdered the leaves in a jar for convenience, you can even store the dehydrated leaves in a clean jar.
- Stays fresh for more than 6 months when stored in a dry place.
