We've all eaten those nostalgic jujubes in our childhood. I love them and have had lots in my childhood. I wanted to try those in my kitchen and after a lot of trial and testing. I was able to bring to the perfect jujubes recipe. Since Sweet limes are in season, then why not try sweet lime jujubes. I've made these without the use of gelatin or agar-agar. INGREDIENTS:
- Sweet lime juice- 1 cup (I've used fresh juice and strained the pulp and seeds)
- Powdered sugar- 1/2 cup
- Cornflour- 1/3 cup
- Yellow food colour- a pinch
- Butter- 1 tbsp
- Fine grain sugar crystals- for coating
PROCEDURE:
- Take a non-stick saucepan, add sweet lime juice, sugar and cornflour to it and mix well. Make sure that there are no lumps left.
- Switch on the flame and cook this on low flame while stirring continuously.
- You'll notice that the mixture starts to thicken within 2 mins. Keep stirring and cooking on medium flame.
- After 5 mins of cooking the mixture would have been thickened as shown.
- At this stage, add butter and mix well.
- Once the butter is added, the mixture starts to leave the sides of the pan and starts to turn glossy.
- Switch off the flame and put this mixture in a cling film.
- Wrap it in a cling film by making the edges even and the surface smooth.
- Let it come to room temperature, later refrigerate it for at-least an hour.
- Remove the cling film and cut it into even sized cubes.
- Coat them in sugar crystals and serve right away.
- Sweet lime jujubes are ready. Enjoy!
