INGREDIENTS:
For The Rice:
- Cooked rice- 2 cups
- Oil- 2 tbsp
- Sliced garlic- 5-6 cloves
- Sliced onions- 1 nos
- Cabbage- 1/2 cup (finely shredded)
- Sweet corn- 1/4 cup (boiled)
- Sugar- 1 tsp
- Salt- to taste
- Chilli flakes- 1 tsp
- Black pepper powder- 1 tsp
- Soya sauce- 2 tbsp
- Vinegar- 1 tbsp
- Ketchup- 2 tbsp
For the Chicken:
- Chicken breasts- 1 cup (cleaned, washed and pat dry)
- Salt- to taste
- Red chilli powder- 1 tsp
- Ginger garlic paste- 1 tsp
- Chicken masala- 1 tsp
- Oil- for shallow frying
PROCEDURE:
- Marinate the chicken with the spices for about an hour.
- Shallow fry the chicken on both sides until tender and crispy.
- Shred the chicken using a fork. Set it aside.
- Heat oil in a kadhai, add sliced garlic and fry for a min on medium flame or until it gets a light golden colour.
- Now add sliced onions, corn, cabbage to it along with some salt and sugar.
- Cook it on high flame for 4-5 mins, while stirring in intervals.
- Now add all the spices and sauces to it and mix well.
- Add the rice and shredded chicken to it. Mix gently.
- Remove it in a microwave-safe bowl and microwave for about 3-4 mins.

TIPS FOR THE BEST CHICKEN FRIED RICE:
- You can use leftover rice for this recipe, or even cook rice an hour ago and cool it completely before using. Make sure that the rice is fluffy and not over cooked.
- Always add a little sugar to fried rice, as it balances out the flavours in it.
- You can use any veggies of your choice like : mushrooms, carrots, capsicum and bell peppers. It is completely upto your preference.
- You can even use bite-sized chicken and saute it directly with garlic.
- For a vegetarian version, you can skip chicken or you can even add scrambled eggs or crispy paneer or even tofu, based on your preference.
- For a more healthier version, you can make this recipe using boiled brown rice.
