Aloo Beans Recipe | Potato and French Beans Sabzi

Aloo Beans is a mildly-spiced dry gravy made up of green beans and potatoes. This is a quick recipe and can be made in under an hour. Kids are sure to love this sabzi. INGREDIENTS:

For the Masala Powder:

  • Chana dal- 2 tbsp
  • Urad dal- 1 tbsp
  • Jeera- 1 tbsp
  • Fennel seeds- 1 tsp
  • Cardamom- 1 nos
  • Cloves- 2 nos
  • Cinnamon- 2 1'' sticks

For the Sabzi:

  • Beans- 500 gms (finely chopped)
  • Potatoes- 2-3 nos (medium sized, chopped)
  • Oil- 1 tbsp
  • Onions- 2 nos (finely chopped)
  • Ginger-garlic paste
  • Salt- to taste
  • Red chilli powder- 1 tsp
  • Turmeric powder- 1/2 tsp
  • Salt- to taste
  • Tomatoes- 1/2 cup (chopped)
  • Coriander leaves- 1/2 cup (chopped)

PROCEDURE:

  • Take all the whole spices in a pan and roast them on a low flame. When the spices get fragrant, switch off the flame.

  • Let it cool completely, add them to a jar and grind it to a fine powder. Set it aside.
  • Wash the chopped veggies and drain it in a colander. Set it aside.

  • Heat oil in a pressure cooker, add onions to it and saute until translucent.

  • Now add ginger garlic paste, salt, red chilli powder and turmeric powder. Saute on medium flame until the raw smell of spices goes away.

  • Now add the drained veggies and chopped tomatoes to it. Mix well and now add approx. 1/2 cup water to it. This is needed to cook the veggies, we'll reduce it later.

  • Now add the prepared masala powder to it and mix well.

  • Cook this for 3 whistles. Once done, allow the pressure to release naturally. Check if the veggies are cooked or else cook for 1 more whistles. Till then, it should be done.
  • Check for salt and spice and add more salt and spice if needed.
  • Reduce any extra gravy as we want a dry sabzi. Alternatively you can even keep the gravy as it is.
  • Add chopped coriander leaves to it. Serve hot with roti or rice.
