We're back onto the street-style Indo-chinese craze. We have Veg Manchurian dry recipe, which goes perfect with fried rice or noodles. We all crave street foods, but step-back as they are deep-fried. Voila, I bring to you healthy and guilt-free Veg Mancurian recipe. And guess what, It's made in our very own appe pan. Try this healthier and guilt-free recipe. Brace yourselves as I take you through the step-by step pictures and a detailed guide of this recipe.
INGREDIENTS:
For The Manchurian Balls:
- Finely chopped veggies of your choice: I've used: *Cabbage- 2 cups (finely chopped) *Carrots- 2 nos (finely chopped) *Potato- 2 nos (medium sized, Grated) *Coriander leaves- 1/2 cup (finely chopped) *Onion- 1/2 cup (finely chopped) *Frozen peas- 1/2 cup (coarsely crushed in a mixer jar) *Frozen corn- 1/2 cup (coarsely crushed in a mixer jar)
- Salt- to taste
- Red chilli powder- 1 tsp
- Black pepper powder- 1 tsp
- Chaat masala- 1 tsp
- Bread crumbs- 1/2 cup
- Maida- 1/2 cup
- Oil- for the manchurian balls
For The Sauce:
- Oil- 1 tbsp
- Garlic cloves- 7-8 nos (finely chopped)
- Coriander stems- 2 tbsp (finely chopped)
- Onion- 2 nos (finely chopped)
- Salt- to taste
- Soya sauce- 2 tbsp
- Ketchup- 2-3 tbsp
- Vinegar- 1 tbsp
- Sugar- 1 tsp
- Cornflour slurry- 2 tbsp cornflour+ 1/2 cup water
- Red chilli powder- 1 tsp
PROCEDURE:
For The Manchurian Balls:
- In a large mixing bowl, add finely chopped veggies of your choice. Make sure that the veggies are finely chopped or else it won't take shape.
- Add the powdered spices, maida and bread crumbs to it.
- Mix well and check if it's taking shape or else dust a little more maida.
- Shape with into small balls and set aside.
- If you want to follow the authentic recipe, then you can deep-fry these balls at this stage.
- I'm using an appe pan. Heat the appe pan, brush some oil in the cavities. Now place a ball in each cavity.
- Now with the help of a fork, turn the balls and make sure they are golden evenly.
- Drizzle some oil on it when needed.
- Manchurian balls are ready. Now let's prepare the sauce.
For The Sauce:
- Heat oil in a kadhai, add garlic to it and saute for a few seconds. Don't burn it, we just want to eliminate the raw smell.
- Now add chopped coriander stems to it. This adds freshness to the sauce and imparts a good flavor to it.
- Now add chopped onions, salt and sugar to it and saute for 2 mins.
Sugar is added to balance out the gravy.
- Now add all the sauces and spices to it. Taste the gravy and add salt and spice if needed.
- Now add the cornflour slurry to it and mix well.
- The gravy might have been thickened by now
- Gently add the manchurian balls to the gravy. Mix gently and switch off the flame.
- Veg Manchurian dry is ready. Serve hot with Noodles or Fried rice.
