INGREDIENTS:
For The Sponge:
- Refined flour- 1 cup
- Sugar- 1/2 cup
- Curd- 1/2 cup
- Oil- 1/2 cup
- Vanilla essence- 1 tsp
- Baking powder- 1 tsp
- Baking Soda- 1/4 tsp
- Milk- 1/4 cup
- Rainbow sprinkles- 2 tbsp (More or less according to your preference)
For Decorations:
- Freshly whipped cream- 1 cup
- Sugar syrup (1/2 cup Water + 1 tbsp sugar)
- Sprinkles for decorations
PROCEDURE:
- Take a large mixing bowl, add curd and sugar to it. Whisk well until the sugar dissolves.
- Now add oil and vanilla essence to it and mix to incorporate the oil into the sugar-curd mixture.
- Mix well and let it rest for 10 mins.
- Meanwhile, sift together flour, baking powder, baking soda in a large bowl.
- Mix the dry ingredients lightly. Now add half of the dry mix to the wet mix. Incorporate using a wooden spatula by cut and fold method.
- Now add the remaining half flour and mix gently, Do not over-mix, as the cake turns rubbery.
- Mix only until all the flour pockets have disappeared, now add milk and slowly mix it.
- Add sprinkles to it and mix gently, you can use any type of sprinkles at this stage.
- Pour this batter in a greased and lined tin and tap to remove air bubbles.
- bake this cake in a preheated oven for about 20-25 mins, or until a skewer inserted comes out clean.
- Once the cake is out of the oven, let it cool down completely before demoulding.
- Cut the cake into two layers, drizzle sugar syrup on the first layer spread a layer of cream. Now place the second layer and repeat the same thing.
- Cover the entire cake with cream and spread sprinkles on it.
- Refrigerate the cake for an hour, sprinkle more sprinkles on top.
- Vanilla cake is ready, serve chilled.
