Who does'nt love this cake? This cake is literally the hero in every kid's Party. We bring to you Eggless Black Forest Pastry recipe that too without condensed milk and without Butter and made without an oven. Black Forest Pastry is decadant chocolate sponge, moistened with homemade cherry syrup and covered in a layer of fluffy whipped cream and plus chocolate shavings and cherry on top for that extra crunch. INGREDIENTS:
For the Chocolate Sponge:
Curd- 3/4 cup
Sugar- 3/4 cup
Oil- 1/2 cup
Refined flour- 1.25 cups
Unsweetened Cocoa powder- 1/4 cup
Salt- a pinch
Baking powder- 1 tsp
Baking soda- 1/4 tsp
Milk- 1/4 cup
For the Cherry Syrup:
Sliced cherries- 4-5 nos
Water- 1/2 cup
Sugar- 1 tbsp
For Decoration:
Sweetened whipped cream- 1 cup (chilled)

PROCEDURE:
For the cake:
Pre-heat a kadhai using salt. That is add salt to a thick-bottomed kadhai and let it heat till we prepare the batter.
Take a large mixing bowl, add curd and sugar in it. Whisk it until all of the sugar gets dissolved. This step may take 4-5 mins.
Now add oil to it, add either Sunflower oil or Ricebran oil, as they don't have a strong smell. Avoid using mustard oil or groundnut oil as they have a very strong smell, and you'll end up with a weird smelling cake.
Mix the oil well until is incorporates evenly. Set this mixture aside for 10 mins.
Meanwhile, sieve together flour, salt, cocoa powder, baking powder and baking soda in a seperate bowl. Mix lightly using a dry spatula.
Add half of the dry mix to the wet mixture, mix using the cut and fold method. Now add the remaining half mixture and mix gently. Make sure to not overmix it.
Now add the milk and fold in lightly, once you see that all the flour pockets have disappeared, that's when you need to stop mixing.
Pour the batter in a greased and lined baking tin. Tap to remove air bubbles.
Place it in the pre-heated kadhai and bake on medium flame for 30-35 mins, or until a skewer inserted comes out clean.
Let the cake cool down completely.
For the Cherry syrup:
Take a pan, add cherries, water and sugar to it.
Mix it and let it cook for 10 mins, or until the cherries have turned soft.
Switch off the flame once the cherries have turned soft and let it cool down.
Assembling the Cake:
Cut the cake into two equal layers. Drizzle half of the cherry syrup on the first layer, including the cooked cherry pieces.
Spread a generous layer of the chilled whipped cream on it. Now place the second layer on it and drizzle the rest of the syrup on it.
Cover the cake with a layer of whipped cream, Keep it in the refrigerator for an hour.
Now apply a final coat of whipped cream on the cake. Sprinkle Chocolate shaving on it and place sliced cherries on it.
Eggless Black Forest Cake is ready. Serve chilled.
