Lobia Sundal | Karamani Sundal | Black eye bean Sundal | South Indian Sundal Recipe

Lobia sundal or Karamani sundal is a spicy tossed protein rich recipe made with boiled black eye beans and minimal spices, yet tastes too yummy to resist. You can serve this simple sundal with dal-chawal or have it as a snack. Try this recipe and let me know in the comments how it turned out.

INGREDIENTS:

  • Lobia/ black eye beans- 1 cup (boiled, for 6 whistles or until done and reserve the stock)
  • Oil- 1 tbsp
  • Onion- 2 nos (medium sized, finely chopped)
  • Mustard seeds- 1/4 tsp
  • Curry leaves- 1 sprig
  • Red chilli powder- 1 tsp
  • Chopped coriander leaves- 2 tbsp
  • Chopped green chillies-1 tsp (optional)

PROCEDURE:

  • Heat oil in a kadhai. Add mustard seeds to it. Allow the seeds to crackle.
  • Add curry leaves to it and let it get crispy.
  • Now add chopped onions to it and some salt.
  • Let the onion get soft and translucent.
  • Now add boiled lobia to it and also add 1/2 cup of the stock we reserved.
  • Now add red chilli powder to it and allow all the water to evaporate.
  • The stock added is nutritious and by the time it reduces all the masala is absorbed by the lobia beautifully.
  • Check for seasoning and add more salt and spice if needed.
  • Sprinkle coriander leaves on it.
Your delicious, easy, protein-rich Sundal is ready. Serve hot along with hot rice and dal or relish it as it is. Enjoy!
