Stuffed Mango Kulfi

One such unique and creative way is stuffed mango kulfi. That is creamy kulfi-rabdi filled in mango cavities and later frozen, which is then peeled and cut into slices to reveal the yummy mango layers. For this recipe, first we need to make mango-rabdi. You can even use plain-rabdi or dry-fruit rabdi according to your preference. 

FOR MANGO-RABDI: 
INGREDIENTS:
*Full-fat milk- 1 ltr + 1 cup
*Khoya- 250 gms (grated)
*Milk powder- 1 cup
*Sugar- 3 cups
*Cornflour- 2 tbsp
*Mangoes- 2 nos (peeled and chopped) (You can use either alphonso or Raspuri mangoes here)
*Mango Tang- 2 tbsp (For added flavour)
 Note: You can double this recipe or can even use in half.

FOR OUTER LAYER:
*Alphonso Mangoes- 2-3 nos 

PROCEDURE: 
*Boil milk on a high flame and reduce heat when it starts boiling.
*Allow to simmer on a low flame.
*Allow it to reduce.
*Keep stirring in between.
*When the milk is reduced to 3/4 th, take lukewarm 1 cup milk and dissolve milk powder and cornflour in it.
*When its completely dissolved, add grated khoya to the same milk.
*Mix well to remove all lumps.
*Now add this to the simmering milk and mix well and continue to cook on a low flame.
*As soon as it starts to thicken, add sugar and stir until it dissolves.
*Switch off the flame and let it cool completely.
*Now blend mangoes along with tang to a smooth puree.
*Add the kulfi mixture to the same blender and blend it along with mango puree for 2-3 mins.
*You'll notice that the mixture has thickened and turned very creamy.
*Taste and add sugar or tang if required.

THE ASSEMBLY:
*Take a washed and drained Mango.
*Always select a mango which is ripe enough but sturdy too. Cause i'll hold shape only when its not too soft.
*Cut the top part (crown) and kepp it aside.
We'll use it later.
*Now using a sharp knife carefully loosen the sides of the seed.
*Loosen all the sides and gently remove the seed.
*Fill the cavity with mango- rabdi and cover the crown part.
 *Place the mango in a bowl so that it is upright.
*Freeze for 5 hrs.
*Remove from freezer and peel the mango using a sharp peeler.
*Now cut the crown part and slice the mango.
*Sprinkle tutti-frutti and serve right away.
