Makhana roast namkeen

INGREDIENTS:
*Makhana (Foxnut) - 1 cup
*Ghee- 2 tbsp
*Curry leaves- 1 sprig
*Roasted gram dal- 1 tbsp
*Peanuts- 1 tbsp
*Raisins- 2 tbsp
*Salt- to taste
*Red chilli powder- 1/2 tsp
*Turmeric powder- 1/4 tsp
*Chaat masala- 1 tsp
*Jeera powder- 1/2 tsp

PROCEDURE:
*Heat 1 tbsp of ghee in a kadhai, add makhana to it and keep roasting it on low flame for about 5 mins while stirring continuously.
*Now add another tsp of ghee and add some salt and red chilli powder and roast it on low flame for another 5 mins.
*How to check if makhana are roasted properly? 
Break a makhana and if it breaks easily while making a crunchy sound, then it's done.
*Remove makhana in a bowl and set it aside.
*Now heat 1 tsp ghee in a kadhai, add curry leaves and let it get crispy.
*Now add peanuts and chana dal and fry till golden in colour.
*Now add raisins and fry till it puffs up.
*Now add makhana, turmeric, some salt, red chilli powder, chaat masala and mix well.
*Roast it on low flame for another 2 mins.
*Let it cool down completely and then store it in an airtight container. 
*Stays good for 1 week.
