It's rare to find someone who doesn't love gajar ka halwa. This winter special halwa has a special place in my heart. This halwa tastes even more amazing when made with red carrots. Creamy Gajar ka halwa with almond slivers which add a slight crunch, is a perfect Biryani accompaniment. Try this recipe and let me know in the comments how it turned out.
INGREDIENTS:
*Red carrots- 500 gms
*Whole milk- 1 ltr
*Sugar- 300 gms
*Condensed milk- 1 tin
*Milk powder- 4 tbsp (dissolved in 1/2 cup milk)
*Khoya- 200 gms
*Almonds-10- 15
*Ghee- 1 cup
*Dalchini- 2 1” sticks
*Green cardamom- 3/4
*Cardamom powder- ¼ tsp
PROCEDURE:
*Peel carrots and wash them well.
*Shred carrot finely in a food processor.
*Take a non- stick vessel and boil milk.
*Add carrot to it and let it soften.
*Allow the milk to evaporate.
*Feel free to add more milk if the carrot doesn’t soften.
*More milk means a more richer tasting halwa.
*Add sugar and stir well until it dissolves completely.
*Now add condensed milk and grated khoya and mix well.
*Now add the milk powder mixture and mix well.
*Keep it aside.
*Heat a pan and add ghee to it.
*Add dalchini and cardamom. Pour it over the halwa.
*Mix well and garnish with fine almond slivers.
*Let it rest for 15 mins before adding cardamom powder.
*Delicious gajar ka halwa/ carrot halwa is ready.
