STUFFED TOMATOES/ BHARWA TAMATAR


 

We all know BHARWA BAINGAN, but have you tried bharwa tamatar (stuffed raw tomatoes). A tangy, spicy and tasty dish made using raw tomatoes. I had a tomato plant in my garden, the plant dried out before the tomatoes could ripen. So, I used those tomatoes to make this tangy and tasty side- dish recipe. INGREDIENTS:

*Raw green Tomatoes- 10-12 nos (medium sized)

 

For the Stuffing:

*Peanuts- 2 tbsp

*Chana dal- 1 tbsp

*Dry red chillies- 2-3 nos

*Cumin seeds- 2 tsp

*Coriander seeds- 2 tsp

*Grated coconut- 2 tbsp

*Salt- to taste

 

For the gravy:

*Oil- 3 tbsp+ 1 tbsp (for frying+ for gravy)

*Jeera- 1 tsp

*Curry leaves- 10-12 leaves

*Onion- 1 (medium sized, finely chopped)

*Tomatoes- 2 nos (finely chopped)

*Jaggery- 1 tbsp

*Tamarind pulp- 1 tsp

*Coriander leaves- 2 tbsp (finely chopped)

*Salt- to taste

*Red chili powder- 1 tsp

*Turmeric powder- ¼ tsp

*Water- ¼ cup


 

PROCEDURE:

Prep the Tomatoes:

*Make X shape marks on the bottom of the tomatoes.

*Wash it well and drain in a colander. Set this aside.

*Heat a pan, add peanuts and roast it on low flame until the peel starts crackling.

*Remove it in a plate and set aside.

*Rub the peanuts with the help of your fingers and remove the peel.

*Blow and separate the peel from the peanuts.

*Now heat a pan and add the rest of the ingredients listed under stuffing except for grated coconut.

*Roast on low flame until the spices turn aromatic.

*Remove it in a plate and let it cool down.

*Roast grated coconut on low flame until it slightly changes it's color.

*Now powder all the spices except for coconut and peanuts.

*Now add peanuts and coconut to the powdered spices and grind for 2 secs, such that the peanuts are broken into small bits.

*Stuff the masala inside the tomatoes.

*Freeze them for about 10 mins.

*Heat some oil in a pan and fry the tomatoes till they change their color.

*Remove them in a plate and set it aside.

 

For the gravy:

*Heat oil in a kadhai, add jeera and curry leaves. Let them crackle.

*Now add onion and some salt, cook it till it turns translucent.

*Now add chopped tomatoes and cook till mushy.

*Add the leftover stuffing.

*Now add the rest of the ingredients.

*Mix well and let it come to a boil, check for seasoning and add more salt or chili powder if needed.

*Now add fried tomatoes to it, stir gently and let it simmer for some time.

*Check if the tomatoes are cooked, add little water if needed to cook them.

*Garnish Bharwa Tamatar with coriander leaves and grated coconut. Serve hot along with some roti or kulchas.
