Fresh Pineapple Cream Cake

 


Summer calls for fresh pineapple cream cake… they are easy to make, and tastes amazing. I’m going to share with you a moist, refreshing and flavorful pineapple cake recipe. This recipe is eggless and made using fresh pineapple, you can alternatively use canned ones too. Try this and let me know in the comments how it turned out.

 

I’ve used fresh pineapple, peeled and chopped into chunks. Later I divided it into three portions. One for the pineapple jam kinda mixture, next is the glaze and third is a smaller portion- mini chunks to fold in the batter.


 

INGREDIENTS:

For the cake:

*All-purpose flour- 1+ ½ cup

*Baking powder- 1 tsp

*Milk powder- 2 tbsp

*Curd- 1 cup

*Baking soda – ½ tsp

*Castor sugar- ¾ cup

*Cooking oil- ½ cup

*Vanilla essence- 1 tsp

*Pineapple chunks- 2 tbsp {chopped into ¼’’ cubes}

 

For the jam layer:

*Pineapple puree- 1 cup

*Sugar- 3 tbsp

 

For the glaze:

*Pineapple puree- 2 cups

*Sugar- 3 tbsp

*Cornflour- 2 tbsp

 

For decorations:

*Whipped cream- ½ cup

*Pineapple wedges- for topping

 

PROCEDURE:

For the cake:

*In a bowl, add curd and baking soda. Mix well and set aside until it turns foamy.

*In a large mixing bowl, add sugar and oil, whisk continuously until sugar starts to dissolve and the mixture turns airy.

*Now add Vanilla essence and pineapple chunks and mix for a couple of seconds.

*Now add the curd mixture to this and mix well.

*In a large mixing bowl, sieve together flour, baking powder and milk powder.

*Now fold in the wet and dry ingredients, mix only till all the flour pockets have gone.

*Pour this cake in a greased and lined tin, bake this cake for around 20-25 mins or until a skewer inserted comes out clean.

*Cool the cake completely.

 

*JAM LAYER:

*Meanwhile let’s prepare the jam layer.

*Take a sauce pan, add pineapple puree and sugar, mix well and let it come to a boil.

*Keep stirring continuously and let it cook and thicken until it reaches a jammy consistency.

*Switch off the flame and let it cool completely.

 

*FOR THE GLAZE:

*Now let’s prepare the glaze.

*Take a pan, add all the ingredients and mix well.

*Now switch onn the flame, and cook while stirring continuously.

*Let it cook for about 2 mins until It reaches a pudding consistency.

*Now let it cool completely.

 

*THE ASSEMBLY:

*Now take the cake divide into two layers.

*Moisten the cake with some simple syrup.

*Now spread the jam evenly and spread a layer of whipped cream on top of it.

*Now place the second layer and moisten the layer.

*Now spread the thick glaze around the cake and smooth out

the edges.

*Fill a piping bag with whipped cream and any nozzle of your choice.

*Pipe out rossetes on the cake, place a wedge of pineapple on each rossete. There you go fruity, creamy, fresh pineapple cake is ready.
