Now that the schools have reopened, we have moms have to be creative to
provide a nutritious yet tasty breakfast to our children. Lots of veggies in
your kid’s tiffin means increasing your kid’s immunity in these challenging
pandemic times. Here is an interesting recipe for fussy kids who refuse to eat
veggies.
INGREDIENTS:
*Penne pasta- 2 cups
*Green peas- ½ cup (frozen or fresh)
*Sweetcorn- ½ cup
*Carrot jullienes- ½ cup
*Bell peppers- ½ cup
*Spring onion- ½ cup (finely chopped)
*Cabbage- ½ cup (finely shredded)
*Garlic- 6-7 pods (finely chopped)
*Oil- 2 tbsp + 1 tsp
*Dark soy sauce- 2 tbsp
*Vinegar- 2 tbsp
*Sugar- 1 tbsp
*Chilli flake- 1 tsp
*Black pepper powder- ½ tsp
*Salt- to taste
*Tomato ketchup- 2 tbsp
Preparation time- 20 mins
Cooking time- 20 mins
PROCEDURE:
*Take a large pan, fill it with 4 cups water, add salt and a tsp of oil
and let it come to a rolling boil.
*Add pasta and keep stirring, cook till al- dente.
*Drain in a colander, pour cold water over it, to avoid sticking pasta.
*Heat a wok or cast iron kadhai, let the flame be high.
*Add oil and let it come to smoking point.
*Now add garlic, fry for a minute.
*Now add all the veggies one by one spring onion except and cook on
high flame.
*Fry for 2 mins.
*Now add sugar and salt.
*You add sugar to retain colour of veggies and look appealing to kids.
*Now saute well.
*After frying for 2 mins, add pasta and mix well.
*Now add soy sauce, vinegar and tomato ketchup. Mix well.
*Add chilli flakes and pepper powder. Mix well.
*Check for seasoning. Add more salt and pepper if necessary.
*Lastly, add spring onions and toss well.
*Serve hot.
*Tastes better even after 2-3 hrs in a tiffin box.
