INGREDIENTS:
For the dough:
*Maida- 2 cups
*Salt- ½ tsp
*Curd- ½ cup
*Finely chopped coriander- 1 tbsp
*Finely chopped dill leaves- 1 tbsp (optional, but adds flavor)
*Water- as necessary
*Oil- for kneading
For the filling:
*Grated paneer- 1 cup
*Potato- 1 nos (boiled and mashed finely)
*Salt- to taste
*Chilli flakes- 1 tsp
*Jeera powder- ½ tsp
*Amchur powder- ½ tsp
*Chaat masala- ½ tsp
*Coriander leaves- 1 tbsp (finely chopped)
PROCEDURE:
For the dough:
*In a large bowl, take maida. Add salt, chopped greens and curd.
*Mix well till they resemble bread crumb texture.
*Now add water and knead a stiff dough.
*Add oil and knead well.
*Cover and rest for ½ hour.
For the filling:
*In a mixing bowl, add all the ingredients and mix well.
*Taste and add more spice according to your taste.
*Make lemon sized balls of the filling and refrigerate for 10 mins.
For the paratha:
*Heat a cast iron tawa over high flame.
*Take a small portion of the dough and roll it.
*Place the filling ball in the centre.
*Now shape it into ball, taking the edges to the centre.
*Now dust some flour on the dough and roll out evenly.
*Place the paratha on the hot tawa.
*Cook evenly on both sides. Apply oil as necessary. You may even add
ghee for extra flavor.
*Prepare the rest of the parthas using the same method.
*Serve hot along with cucumber dip.
