Potato is an all-time favorite in my house. My kids love it so much
that I add it all my dishes. This potato stir fry is my childhood favorite. Just
the aroma of these potatoes cooking is enough to take me back to my childhood.
Do give it a try I’m sure your kids will love it too. The best part is
that it doesn’t take long time to prepare and doesn’t need a long list of fancy
ingredients. Here’s the recipe.
PREP TIME: 5 mins
COOKING TIME:5 mins
INGREDIENTS:
*Potatoes (large, Halved and sliced into ½ cm thick slices)-4
*Cooking oil- 1 tbsp
*Mustard seeds- ¼ tsp
*Curry leaves- 10 leaves
*Hing- A generous pinch
*Salt- ¾ tsp (add more or less according to your taste)
*Red chilli powder- ¾ tsp
*Water- 100 ml
PROCEDURE:
*Heat a pressure cooker, add oil and mustard seeds. Allow it to
splutter.
*Add curry leaves. Fry for 30 secs.
*Now add the potato slices.
*Saute for a min. Now add red chilli powder, salt and hing.
*Mix well. Now add water.
*Pressure cook for 1 whistle.
*Open the pressure cooker and check if the potatoes are soft.
*Now remove it in a pan and cook it on medium flame till excess water
evaporates.
*Tastes best with roti or rice.
