Bakery-Style Honey Cake Recipe

EGGLESS BAKERY STYLE HONEY CAKE WITHOUT OVEN

 

We bring to you eggless honey cake which is similar to sponge cake but soaked in honey syrup and fruit jam icing. This honey flavoured cake is hugely popular in south India. Give this recipe a try and let me know in the comments how it turned out.

 

INGREDIENTS:

For Cake Batter:

*1/2 cup curd

*1/2 cup powdered sugar

*1/2 tsp baking powder

*1/2 tsp baking soda

*1 tsp vanilla essence

*1/4th cup cooking oil

*2/3 cup all purpose flour

 

For Honey Syrup:

*1/4th cup water

*1/4th cup honey

 

For Jam Layer:

*1/2 cup mixed fruit jam

*1/2 cup water

*2 tbsp honey

 

PROCEDURE:

*In a large mixing bowl add curd, powdered sugar, baking powder and baking soda.

* whisk well until the mixture is lump free.

* Now rest this batter for 10 mins.

*Now add cooking oil and whisk slowly until well combined.

*Now add pre- sieved flour to it.

*Now gently fold in the mixture until all the flour pockets have disappeared. Don’t overmix the batter. Always remember OVERMIXING= DENSE CAKE.

*Pour the batter in a greased 7 inch mould. Tap mould to remove air bubbles.

*Place a wire rack in a kadhai and pre-heat for 10 mins.

*Now place the mould in the kadhai and bake for 40- 45 mins on low flame.

*While the cake is baking, prepare the honey syrup.

*For making the syrup dissolve sugar in water and then add honey. Now the syrup is ready.

*Now for the jam layer, heat a pan and add water and honey.

And after the mixture boils add jam and boil until it dissolves, stirring continuously. Now the jam layer is ready.

*After the cake is baked, do the toothpick test.

*remove the cake from the mould and leave the cake to cool completely by covering the cake with a damp kitchen towel to avoid drying up of the cake.

*After the cake is cooled completely, poke holes on the cake using a skewer.

*Now pour the honey syrup generously, the cake will quickly absorb all the syrup.

* Now spread the jam layer evenly.

*Refrigerate the cake for 15 mins. Now cut the cake into even square pieces.

*Decorate the cake with a dollop of freshly whipped cream and some tutti frutti. [This is completely optional]

*Serve this cake chilled and enjoy!
