BEETROOT POTATO SABZI
Beetroot is one of the tastiest vegetable. It's considered as a super food, packed with all essential nutrients. This recipe which I’m going to share today is one of the tastiest & easy to make dish which is enjoyed by children & adults alike.

Ingredients:
v Beetroot - 250 gms
v Potatoes - 250 gms
v Onion - 1 large {Finely Chopped}
v Ginger Garlic Paste - 2 tsp
v Grated Coconut - 1 heap tablespoon
v Tomatoes - 4 {Medium Sized}
v Coriander leaves - 1 tablespoon {finely chopped}
v Chilli powder - 1 tsp
v Oil - 1 tablespoon
v Salt to taste
Method
· Peel Potatoes & Beetroot, Wash them well & drain in a colander.
· Chop Beetroot finely, if you cannot chop finely, grate in a food processor coarsely.
· Chop potatoes into cubes, keep it aside.
· Heat oil in a pressure cooker, add chopped onions; fry well till it's softens, add ginger garlic paste.
· Add 1 tsp chilli powder and saute for a few seconds.
· Add the vegetables and saute well.
· Add salt.
· Now puree the tomatoes and add to the vegetables.
· Add grated coconut and mix well.
· Add sufficient water for the vegetables to cook.
· Give it a good stir and check for seasoning and add salt and chilli according to your desire.
· Cook on high flame until 4 whistles.
· Cook on simmer for three more whistles.
· Allow the steam to release naturally and if there is excess gravy evaporate it.
· The sabzi should be of thick consistency.
· Sprinkle some freshly chopped coriander leaves and serve hot.
· Tastes best with freshly prepared rotis or phulkas.
