Mutanjan - The Traditional Sweet | 5 Star Kitchen


MUTANJAN

This is a traditional sweet dish made on special occasions like festivals and weddings. This recipe is a bit time-consuming. But every spoonful is worth it. Do let me know in the comments section after you have tried it.





Ingredients:-

1.                Basmati rice – 1 Cup
2.                Whole Milk – 1 Ltr
3.                Khoya – ½ Cup
4.                Condensed Milk – ½ Cup
5.                Almonds – 8 to 10 (Soaked in water for 1 Hour)
6.                Dalchini – 2 No’s (1 inch Piece)
7.                Green cardamom – 2 or 3
8.                Yellow food color – A Pinch
9.                Ghee – 1 Tbsp
10.            Sugar – 2 Cups

Method:-

Heat a vessel and add ghee. Add Dalchini and cardamom; when they splutter add the milk; allow it to boil. Add the rice and stir slowly (rice must be washed and drained) stir continuously on a medium flame. Let the rice cook till it softens. The rice should not be whole; it should be soft almost broken. Now add the food color and mix well. Add sugar, condensed milk and Khoya. The Khoya must be soaked in a cup of Luke-warm water; mix well. Allow to cook for 2 minutes. The mixture should be continuously stirred to avoid charring. Check for sweetness; add more sugar if necessary. Remove into a bowl; garnish with sliced and blanched almonds.
