Green Moong with Potatoes
Ingredients:

Green Moong
– 1 Cup (Washed & Soaked for 2 Hours)

Potatoes
– 2 (Peeled & Diced into Small Pieces)
3.
Medium
Sized Tomatoes – 4 (Pureed)

Onions
– 2 (Finely Chopped)
5.
Grated
Coconut – ½ Cup
6.
Red
Chili Powder – 1 Tsp
7.
Ginger
Garlic Paste – 2 Tsp
8.
Coriander
Powder – ½ Tsp
9.
Garam
Masala Powder – ½ Tsp
10.
Jeera
Powder – ½ Tsp
11.
Salt
To Taste

Coriander
Leaves for Garnishing

Oil
– 1 Tbsp
Method:
Heat
oil in a pressure cooker; add finely chopped onion and fry till translucent;
now add ginger & Garlic Paste and fry well add red chili powder, potatoes
and salt Mix well. Now add the drained green Moong. Reserve the liquid. Mix
well; and add the tomato puree and grated coconut; mix well. Add all the spices
and check for salt; mix well. Add water according to your preferred
constituency. Cook for 4 whistles; garnish with coriander leaves while serving.
Serve hot with roti’s.
